If I had to pick our families favourite recipe today, in the midst of winter, I would choose this.

I would pick it because I have my biggest girl beside me, slicing apples. I have my superhero popping the ingredients into the processor and the littlest one is climbing on benches and chairs to peer over our shoulders.

I distract the three of them as the pie cooks and then say ‘not just yet’ countless times as they excitedly wait for it to cool. When I can hold them off no longer we all sit on the floor with bowls and  spoons in our hands and excitedly tuck in.

I take a minute to bask in the warmth of the pie and the warmth of my babies and for a second the moment is perfect.

Right now I can picture this vividly. It is a scene I know well. But in a year’s time my superhero may not want to bake with Mum, by baby may have outgrown her endless curiosity and my biggest girl could be off with friends. Who knows? What I do know is that life changes constantly, sometimes more rapidly or drastically than we would like. Sometimes subtly, with us barely noticing. If only we could capture the precious, everyday moments. The little things you feel so sure you will never forget and then something happens, times passes and suddenly it isn’t quite so clear.

Apple Pie

Crust

  • 3 cups almond meal (320 grams)
  • 1 egg
  • 1 tablespoon coconut oil, firm (20 grams)
  • 2 tablespoons honey* (40 grams)
  • pinch of salt
  1. Pre heat your oven to 180°C or 350°F. Grease an 18cm pie tin or spring form pan.
  2. Place the ingredients into your processor and blend until the mixture resembles a dough consistency. It will only take a few seconds. Press the dough into the base and a few centimetres up the sides of your pan.
  3. Bake for 10 minutes or until lightly golden. Remove from the oven and allow to cool.

Filling

  • 5 apples, thinly sliced
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  1. As you slice the apples place them into a large saucepan half filled with water. Once you have finished slicing the apples drain off the water and return the apples to the saucepan. Add the remaining ingredients and place the saucepan over medium heat.
  2. Simmer the apples for ten minutes, stirring occasionally. Make sure there is a small amount of liquid, you can place the lid on the saucepan if need be.
  3. Use a slotted spoon to fill the base with the apple pie filling and place the pie into the oven. Bake for 15 minutes or until the edges are golden, the apples should be very soft.
  4. Remove from the oven and cool slightly. Slice. Serve. Eat and enjoy.

Thermomix Instructions

  1. Pre heat your oven to 180°C or 350°F. Grease an 18cm pie tin or spring form pan.
  2. Place the base ingredients into the TMX bowl and blend for 7 seconds, speed 5. Press the dough into the base and a few centimetres up the sides of your pan.
  3. Bake for 10 minutes or until lightly golden. Remove from the oven and allow to cool.
  4. Follow the instructions above for the filling or shred the apples in your TMX and cook briefly before adding to the base.
